Peanut Cupcakes

These peanut cupcakes are very easy to make, don't take much of your time and are super fluffy.

For the batter:
1 vanilla bean
200g soft butter
150g sugar
4 eggs
200g flour
2 teaspoons baking powder
1 pinch of salt
For the icing:
150g soft butter
150g full fat cream cheese
2 table spoons crunchy peanut butter
5 tablespoons icing sugar
3 table spoons roasted & salted peanuts

1) Preheat the oven to 160°C (fan) or 180°C (top and bottom heat).

2) Cut open the vanilla bean and scrape out the vanilla pods with a knife. Together with the butter and the sugar, add them to a bowl and whisk until smooth.

3) While whisking, gradually add the eggs to the creamy mixture. Mix the flour (I took half whole grain, half plain flour), the baking powder and the salt and sift everything into the bowl. Whisk until your batter is smooth.

4) Prepare your muffin cups or tray and spoon the batter into them / it. Bake for 20-30 minutes at 160°C (fan) or 180°C (top and bottom heat).

5) Take the muffins out of the oven once you feel their tops have become springy, you can check with a wooden toothpick if the batter inside is fully baked (stick it into the muffin and if the tooth pick comes out clean, the muffin is ready). Let them cool down!!!

6) Add the butter, cream cheese, peanut butter and icing sugar into a bowl and whisk together until smooth.

7) Spread the icing onto the muffins with a bread knife or alternatively use a piping bag with a small nozzle which usually makes the cupcakes look more 'done'.

8) Chop the peanuts into smaller pieces and sprinkle over the icing. Their saltiness gives the finished product a nice touch! Yummy!!!
