Yoghurt Waffles

Everyone likes waffles, right? Well, I sure do and today I am sharing my amazing yoghurt waffles recipe with you and depending on what flavour yoghurt you use - whether berries, citrus fruit, plain, or even apple purée and a little cinnamon - they'll taste a little different each time.

This is what you'll need:
125g margarine
100g sugar
1 tablespoon vanilla sugar
3 eggs
250g flour (wholemeal or plain)
1 teaspoon baking powder
250g yoghurt of your choosing

Mix together the margarine, sugar, vanilla sugar and eggs in a bowl until you have a smooth mixture. Combine the flour and baking powder and add to the bowl. Loosely stir in the yoghurt with a spatula. To transfer the batter from bowl to waffle maker use a spoon or spatula. Now all you need to do is bake your waffles. Enjoy the warm waffles with icing sugar, whipped cream, custard or just plain. If you don't manage the whole batch on Day 1, keep them refrigerated and simply toast them for a few minutes before serving; they'll be a little more crispy than on Day 1 but just as nice.
