Union Jack Cupcakes

These celebratory Jubilee Fairy Cakes don't need much of your time, look pretty and are very yummy (I got slightly free spirited ones due to the lack of a muffin tin but never mind)!!!

250g soft-ish butter
200g caster sugar
4 medium eggs
250g self-raising flour
vanilla essence

500g icing sugar
4 tablespoons of water
food colouring

Preheat the oven to 200 C (fan).

Makes 20 cupcakes.

How to make fairy cakes:
1) Whisk together the butter and the sugar until soft and fluffy. Now add 2 teaspoons of vanilla essence and stir in. Add one egg after the other, mixing each one in properly. Add the flour and stir until combined. Use a spoon to fill the batter into a muffin tin lined with muffin cases and bake for 20 minutes at 200 C.
2) To make the icing, fill the entire 500g of icing sugar into a bowl and add 4 tablespoons of water - it is always better to start with too little rather than too much water, but 4 tablespoons are usually enough for the half kilo of icing sugar. Now you add the food colouring; the more the richer. If you have more than one colour, divide the icing into separate bowls before adding the colouring.
3) Spread the icing onto the cooled-down muffins using a regular knife. Add sprinkles and the previously made DIY Union Jack Sticks. Done!!

All of my ingredients as well as these cute muffin cases and the fancy sprinkles have been purchased at Sainsbury's.
