Red Velvet Cupcakes

Red Velvet is the cake flavour I most often choose when I buy cupcakes somewhere, particularly at the Hummingbird Bakery or Violet Cakes, although I also always tend to get a second more interesting flavour along with my red velvet. Well, for the first time now, I have made my own red velvet cupcakes.
Ingredients: 150g butter (soft) - 150g caster sugar - 2 eggs - 1 teaspoon vanilla essence - 2 teaspoons red food colouring - 150ml buttermilk - 150g self-raising flour - 1 teaspoon cocoa powder - 1 teaspoon baking powder
Cream cheese icing: 20g butter - 40g cream cheese - 400g icing sugar
Preheat the oven to 180°C.
1) Whisk together the butter and sugar until light and fluffy. Gradually beat in the eggs, add the vanilla essence, food colouring and buttermilk. Combine the flour, baking powder and cocoa in a separate bowl and add to the batter.
2) Spoon the mixture into your muffin cases and bake for 30 minutes at 180°C.
3) For the cream cheese icing (or buttercream frosting) beat together the butter and cream cheese. Slowly sift in the icing sugar and whisk all together. The icing sugar is very powdery and it is best to whisk it in gradually rather than all at once unless you want your entire kitchen covered in fine white dust.
4) Take the muffins out of the oven and let them cool down.
5) Using a piping bag, knife or spoon, cover the muffins with the white cream cheese icing and decorate with sprinkles, glitter or sugar balls. Yummy!!
