Pumpkin Cupcakes

I made pumpkin cupcakes last weekend and they were extremely delicious so I thought I would share them with you. I found the recipe here, but I made regular icing instead of the special maple syrup icing which was suggested in the original recipe. As you can see, I failed miserably in attempting to make orange icing by using red and yellow food colouring, however, the flavour of the final cupcake was amazing and seriously addictive. 

For all my UK readers, I found Libby's pumpkin puree at Waitrose whose customer services were very helpful in telling me which stores stock this product because not all of them do.

  1. If you haven't told us that the icing was supposed to be orange I think nobody would have cared ;o) Actually the cupcakes look really yummy. When reading your baking posts I always try to push myself to do more baking, too but it appears I'm too lazy.

  3. These look lovely, I haven't been doing much baking recently but I'd like to make something pumpkinny, I tend to make my own puree by just baking half a pumpkin for a while until it turns soft then mashing it
    hopefully there'll be some cheap pumpkins now halloween is over

    1. I dislike the smell of the inside pumpkin so I usually avoid anything to do with it. If I carve pumpkins, I leave the cleaning out to my boyfriend :)

  4. these look yummy! i actually like the color but if you want a more classic pumpkin-y orange then next time just up the yellow coloring ;-)

    1. I only realised how weak the yellow is and how strong the red when it was too late already. Didn't want to waste the food colouring. Thanks for the advice though :)
